  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the beef and cook until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3 minutes.
  4. Add the sliced mushrooms and cook until they are tender, about 5 minutes.
  5. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
  6. Return the cooked beef to the skillet and stir to combine. Reduce heat to low and stir in the sour cream. Cook until heated through, about 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the beef stroganoff over the cooked egg noodles and garnish with chopped parsley.
