Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic; sauté until softened.
- Stir in tomato paste, thyme, salt, and pepper.
- Add beef back to the pot along with beef broth, carrots, potatoes, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2-3 hours.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mix 2 tablespoons cornstarch with water and add to the stew.
- Use fresh herbs for added flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
