Description
A hearty and flavorful beef stew cooked in a crock pot.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 large carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet over medium heat.
- Transfer beef to the crock pot.
- Add carrots, potatoes, onion, and garlic.
- Stir in beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- Serve hot.
Notes
- For thicker stew, add a cornstarch slurry in the last hour of cooking.
- Feel free to add your favorite vegetables.
- Store leftovers in the refrigerator for up to 3 days.
