Ingredients

  • 4 cups beef broth
  • 4 large carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Transfer beef to the crock pot.
  3. Add carrots, potatoes, onion, and garlic.
  4. Stir in beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  6. Serve hot.

  • For thicker stew, add a cornstarch slurry in the last hour of cooking.
