- 1 pound beef stew meat
- 4 cups beef broth
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onion and garlic; sauté until softened.
- Pour in the beef broth and add the carrots, potatoes, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Season with salt and pepper. Remove bay leaf before serving.
