Tender and flavorful beef short ribs cooked to perfection in the Instant Pot.
Ingredients

- 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine (optional)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 carrots, chopped
- 1 bay leaf
Instructions
- Set the Instant Pot to ‘Sauté’ mode and heat the olive oil.
- Season the short ribs with salt and pepper, then brown them in batches until golden on all sides. Remove and set aside.
- Add the chopped onion to the pot and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
- Add soy sauce, brown sugar, thyme, carrots, and bay leaf. Stir to combine.
- Return the browned short ribs to the pot, making sure they are submerged in the liquid.
- Seal the Instant Pot lid and set to ‘Manual’ high pressure for 45 minutes.
- Once the cooking time is up, allow for a natural pressure release for 15 minutes, then quick release any remaining pressure.
- Remove the short ribs and set aside. Optionally, thicken the sauce using the ‘Sauté’ function by reducing the liquid for a few minutes.
- Serve the short ribs with the sauce drizzled over the top.
Notes
- For extra flavor, marinate the short ribs in the sauce overnight before cooking.
- Serve with mashed potatoes or crusty bread to soak up the delicious sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
