Description

Tender and flavorful beef short ribs cooked to perfection in the Instant Pot.


Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 carrots, chopped
  • 1 bay leaf

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and heat the olive oil.
  2. Season the short ribs with salt and pepper, then brown them in batches until golden on all sides. Remove and set aside.
  3. Add the chopped onion to the pot and sauté until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
  6. Add soy sauce, brown sugar, thyme, carrots, and bay leaf. Stir to combine.
  7. Return the browned short ribs to the pot, making sure they are submerged in the liquid.
  8. Seal the Instant Pot lid and set to ‘Manual’ high pressure for 45 minutes.
  9. Once the cooking time is up, allow for a natural pressure release for 15 minutes, then quick release any remaining pressure.
  10. Remove the short ribs and set aside. Optionally, thicken the sauce using the ‘Sauté’ function by reducing the liquid for a few minutes.
  11. Serve the short ribs with the sauce drizzled over the top.

Notes

  • For extra flavor, marinate the short ribs in the sauce overnight before cooking.
  • Serve with mashed potatoes or crusty bread to soak up the delicious sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days.
