- 3 pounds beef short ribs
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 bay leaf
Instructions
- Season the beef short ribs generously with salt and pepper.
- Set the Instant Pot to ‘Sauté’ mode and add the olive oil.
- Once hot, add the short ribs in batches, browning on all sides. Remove and set aside.
- In the same pot, add the chopped onion and cook until softened, about 3-4 minutes.
- Stir in the garlic and cook for an additional 1 minute until fragrant.
- Pour in the beef broth and red wine (if using), scraping the bottom of the pot to release any browned bits.
- Add the soy sauce, brown sugar, thyme, paprika, and bay leaf. Stir to combine.
- Return the beef short ribs to the pot, ensuring they are submerged in the liquid.
- Close the lid, set the valve to sealing, and cook on ‘Manual’ or ‘Pressure Cook’ for 45 minutes.
- Once cooking is complete, allow for a natural release for 15 minutes, then quick release any remaining pressure.
- Remove the short ribs and serve with the sauce from the pot.
Notes
- For a thicker sauce, you can remove the short ribs after cooking and set the Instant Pot to ‘Sauté’ mode to reduce the sauce.
- Serve with mashed potatoes or rice for a complete meal.
