- 2 beef shanks, about 2 inches thick
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (163°C).
- Season beef shanks with salt and pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Brown the beef shanks on all sides, then remove from pot.
- Add onion, carrots, and celery to the pot. Sauté until softened.
- Add garlic and cook for 1 minute.
- Pour in red wine and scrape the bottom of the pot.
- Return beef shanks to the pot, add beef broth, thyme, and bay leaf.
- Bring to a simmer, cover, and transfer to the oven.
- Bake for 2.5 to 3 hours until meat is tender.
- Remove from oven, let rest for 10 minutes before serving.
Notes
- Serve with mashed potatoes or crusty bread.
- Leftovers can be frozen for future meals.
- Adjust seasoning as per your taste.
