Ingredients

  • 2 beef shanks, about 2 inches thick
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season beef shanks with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat.
  4. Brown the beef shanks on all sides, then remove from pot.
  5. Add onion, carrots, and celery to the pot. Sauté until softened.
  6. Add garlic and cook for 1 minute.
  7. Pour in red wine and scrape the bottom of the pot.
  8. Return beef shanks to the pot, add beef broth, thyme, and bay leaf.
  9. Bring to a simmer, cover, and transfer to the oven.
  10. Bake for 2.5 to 3 hours until meat is tender.
  11. Remove from oven, let rest for 10 minutes before serving.
