A simple and delicious beef roast cooked in a crockpot.
Ingredients

- 3 lbs beef roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 2 cups potatoes, chopped
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
Instructions
- Season the beef roast with salt, pepper, thyme, and rosemary.
- Place the roast in the crockpot.
- Add beef broth, carrots, potatoes, onion, and garlic around the roast.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove the roast and vegetables from the crockpot. Serve hot.
Notes
- Adjust seasoning to taste.
- Use fresh herbs for better flavor.
- Leftovers can be stored in the fridge for up to 3 days.
