Description
A simple and delicious beef roast cooked in a crockpot.
Ingredients

- 3–4 lbs beef roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Season the beef roast with salt, pepper, and thyme.
- Brown the roast on all sides in the pan.
- Transfer the roast to the crockpot.
- Add carrots, onion, garlic, and beef broth to the crockpot.
- Drizzle Worcestershire sauce over the top.
- Cover and cook on low for 8 hours or high for 4 hours.
- Shred the beef before serving.
Notes
- Serve with mashed potatoes or rice.
- Add potatoes for a complete meal.
- Store leftovers in the fridge for up to 3 days.
