Ingredients

  • 1 cup beef broth
  • 2 cups carrots, chopped
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the beef roast with salt, pepper, and thyme.
  3. Brown the roast on all sides in the pan.
  4. Transfer the roast to the crockpot.
  5. Add carrots, onion, garlic, and beef broth to the crockpot.
  6. Drizzle Worcestershire sauce over the top.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Shred the beef before serving.
