  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Sour cream, for serving
  • Salsa, for serving
  • Chopped cilantro, for garnish (optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes.
  2. Stir in the taco seasoning and cook for an additional 2 minutes, then remove from heat.
  3. Heat another skillet over medium heat and add a teaspoon of olive oil.
  4. Place one tortilla in the skillet, and sprinkle half of the shredded cheese evenly over it.
  5. Spread half of the beef mixture over the cheese, then top with another layer of cheese and cover with a second tortilla.
  6. Cook until the bottom tortilla is golden brown, about 3-4 minutes, then carefully flip the quesadilla and cook the other side until golden and the cheese is melted.
  7. Remove from the skillet and cut into wedges. Repeat with remaining ingredients.
  8. Serve with sour cream, salsa, and garnish with cilantro if desired.

Notes
