Ingredients

- 3 to 4 pounds beef chuck roast
- 2 cups beef broth
- 1 onion, chopped
- 4 carrots, sliced
- 4 potatoes, cubed
- 3 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season the beef roast with salt and pepper.
- Heat a skillet over medium-high heat and sear the roast on all sides.
- Place the roast in the crock pot.
- Add the chopped onion, carrots, potatoes, and garlic.
- Pour the beef broth and Worcestershire sauce over the ingredients.
- Sprinkle thyme on top.
- Cover and cook on low for 8 hours or high for 4 hours.
Notes
- For extra flavor, add herbs like rosemary or bay leaves.
- Serve with crusty bread to soak up the juices.
- Leftovers can be stored in the refrigerator for up to 3 days.
