A hearty beef and mushroom pie with a golden flaky crust, perfect for a comforting meal.
Ingredients

- 500g beef, diced
- 200g mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp flour
- 300ml beef stock
- 1 tsp thyme
- Salt and pepper to taste
- 2 sheets puff pastry
- 1 egg, beaten (for glaze)
Instructions
- Preheat oven to 200°C (180°C fan).
- Brown the beef in a pan, then set aside.
- Sauté onions, garlic, and mushrooms until soft.
- Stir in flour, then slowly add beef stock to make a thick sauce.
- Return beef to the pan, add thyme, salt, and pepper. Simmer for 10 minutes.
- Line a pie dish with one sheet of puff pastry. Pour in the beef mixture.
- Cover with the second pastry sheet. Seal edges and brush with beaten egg.
- Bake for 30 minutes or until golden.
Notes
- Let the pie rest for 5 minutes before serving.
- Use fresh mushrooms for best texture.
- Freeze leftovers for up to 3 months.
