- 2 lbs beef meat (chuck or sirloin, cut into cubes)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup beef broth
- 1 can (14 oz) diced tomatoes
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides, about 5-7 minutes.
- Remove the beef from the pot and set aside.
- In the same pot, add onion, garlic, carrots, and celery. Sauté until the vegetables are tender, about 5 minutes.
- Return the beef to the pot and add beef broth, diced tomatoes, oregano, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat to low and cover the pot.
- Simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove bay leaf before serving. Garnish with fresh parsley.
