  • 2 large onions, sliced
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup milk (optional, for soaking)
  • Fresh parsley, for garnish

Instructions

  1. If desired, soak the beef liver in milk for 30 minutes to 1 hour to reduce bitterness. Drain and pat dry.
  2. In a large skillet, heat the olive oil or butter over medium heat.
  3. Add the sliced onions and sauté until they are soft and golden brown, about 10-15 minutes. Remove the onions from the skillet and set aside.
  4. In the same skillet, increase the heat to medium-high. Add the beef liver slices and season with salt and pepper.
  5. Cook the liver for about 3-4 minutes on each side, or until browned on the outside but slightly pink on the inside. Do not overcook, as liver can become tough.
  6. Return the onions to the skillet and stir to combine. Cook for an additional 2 minutes to heat through.
  7. Serve hot, garnished with fresh parsley.

Notes

  • Liver can be a bit strong in flavor; soaking in milk helps to mellow it.
  • For extra flavor, consider adding garlic or herbs while sautéing the onions.
