- 1 pound flank steak
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bell pepper, sliced
- 1 onion, sliced
- Tortillas, for serving
- Sour cream, for serving
- Salsa, for serving
- Fresh cilantro, for garnish
Instructions
- In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- Add flank steak to the marinade, ensuring it’s well coated. Cover and refrigerate for at least 30 minutes, or overnight for best results.
- Preheat grill over medium-high heat.
- Remove steak from marinade and grill for 6-8 minutes on each side, or until desired doneness. Remove from grill and let rest for 5 minutes.
- While the steak is resting, grill the sliced bell pepper and onion until tender and slightly charred.
- Slice the steak against the grain into thin strips.
- Serve the beef and grilled vegetables in tortillas, topped with sour cream, salsa, and cilantro.
