Beef Enchilada Casserole: 5 Hearty Layers

Description

A hearty beef enchilada casserole filled with layers of beef, cheese, and tortillas.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef, onion, and garlic until the meat is browned.
  3. Add cumin, chili powder, salt, and pepper. Stir to combine.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Layer 4 tortillas over the sauce.
  6. Add half of the beef mixture, half of the black beans, half of the corn, and half of the cheese.
  7. Repeat the layers with the remaining ingredients.
  8. Top with remaining tortillas and enchilada sauce.
  9. Cover with aluminum foil and bake for 25 minutes.
  10. Remove foil and bake for an additional 10 minutes until cheese is bubbly.

Notes

  • Serve with sour cream and cilantro.
  • Can substitute ground turkey for beef.
  • Make ahead and refrigerate before baking.
