Description
A hearty beef enchilada casserole filled with layers of beef, cheese, and tortillas.
Ingredients

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef, onion, and garlic until the meat is browned.
- Add cumin, chili powder, salt, and pepper. Stir to combine.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Layer 4 tortillas over the sauce.
- Add half of the beef mixture, half of the black beans, half of the corn, and half of the cheese.
- Repeat the layers with the remaining ingredients.
- Top with remaining tortillas and enchilada sauce.
- Cover with aluminum foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly.
Notes
- Serve with sour cream and cilantro.
- Can substitute ground turkey for beef.
- Make ahead and refrigerate before baking.
