Ingredients

  • 4 carrots, sliced
  • 2 cups beef broth

  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the beef roast with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat.
  4. Brown the beef on all sides in the skillet.
  5. Remove the beef and set it aside.
  6. Add garlic and onion to the skillet, sauté until translucent.
  7. Add carrots, beef broth, Worcestershire sauce, rosemary, and thyme.
  8. Return the beef to the skillet.
  9. Cover and transfer to the oven.
  10. Bake for 2-3 hours until tender.
