Ingredients

- 2 lbs beef roast
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 carrots, sliced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Preheat the oven to 350°F (175°C).
- Season the beef roast with salt and pepper.
- In a large skillet, heat olive oil over medium heat.
- Brown the beef on all sides in the skillet.
- Remove the beef and set it aside.
- Add garlic and onion to the skillet, sauté until translucent.
- Add carrots, beef broth, Worcestershire sauce, rosemary, and thyme.
- Return the beef to the skillet.
- Cover and transfer to the oven.
- Bake for 2-3 hours until tender.
Notes
- Let the beef rest before slicing.
- Serve with mashed potatoes or rice.
- Store leftovers in the refrigerator for up to 3 days.
