- 2 lbs beef chuck roast, cut into chunks
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 cup beef broth
- 2 tbsp tomato paste

- 1 tsp black pepper
- 1 tsp dried thyme
Instructions
- Place beef chunks in the crockpot.
- Add diced onion, minced garlic, sliced carrots, and cubed potatoes.
- In a bowl, mix beef broth, tomato paste, salt, pepper, and thyme.
- Pour the mixture over the beef and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot.
Notes
- For extra flavor, brown the beef before adding to the crockpot.
- You can substitute potatoes with sweet potatoes for a different taste.
- Add more broth if you prefer a saucier dish.
