- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 medium carrots, chopped
- 4 medium potatoes, diced
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Season the beef chuck roast with salt and pepper on all sides.
- In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Transfer the roast to the slow cooker. Add the chopped onion, garlic, carrots, and potatoes around the roast.
- In a bowl, mix together the beef broth, Worcestershire sauce, thyme, and rosemary. Pour the mixture over the roast and vegetables in the slow cooker.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shreds with a fork.
- Once done, remove the roast from the slow cooker and let it rest for a few minutes before slicing. Serve with the vegetables and broth, garnished with fresh parsley if desired.
Notes
- For added flavor, you can add a bay leaf to the broth mixture.
- You can also include other vegetables like celery or mushrooms for more variety.
- Leftover roast can be stored in the refrigerator for up to 3 days or frozen for later use.
