Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 350°F.
- In a large pot, heat olive oil over medium heat.
- Add beef cubes and brown on all sides.
- Add onion and garlic, sauté until onion is translucent.
- Stir in carrots, potatoes, diced tomatoes, beef broth, tomato paste, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Transfer the mixture to a casserole dish.
- Cover with a lid or foil and bake for 2 hours.
- Remove from oven, let cool slightly, and serve.
Notes
- For extra flavor, add a splash of red wine.
- You can substitute other vegetables like green beans or peas.
- This dish can be made ahead and reheated.
