Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 350°F.
  2. In a large pot, heat olive oil over medium heat.
  3. Add beef cubes and brown on all sides.
  4. Add onion and garlic, sauté until onion is translucent.
  5. Stir in carrots, potatoes, diced tomatoes, beef broth, tomato paste, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Transfer the mixture to a casserole dish.
  8. Cover with a lid or foil and bake for 2 hours.
  9. Remove from oven, let cool slightly, and serve.

Notes

  • For extra flavor, add a splash of red wine.
