- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 can kidney beans (15 oz)
- 1 cup beef broth
- 1 cup frozen mixed vegetables
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef with chopped onion and garlic.
- Add diced tomatoes, kidney beans, beef broth, mixed vegetables, chili powder, cumin, salt, and pepper.
- Stir well and bring to a simmer.
- Transfer the mixture to a casserole dish.
- Bake in the preheated oven for 30 minutes.
