Description
A hearty beef barley soup filled with vegetables.
Ingredients

- 1 lb beef stew meat
- 1/2 cup barley
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Brown the beef in a pot over medium heat.
- Add onions, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add beef broth, barley, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Freeze for longer storage.
