- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 can (14 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 potatoes, diced
- 1 cup green beans, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Pour in beef broth and water, then return beef to the pot.
- Stir in diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add potatoes and green beans, then simmer for another 20 minutes.
- Adjust seasoning if needed and serve hot.
