Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 potatoes, diced
  • 1 cup green beans, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add garlic and cook for 1 minute.
  5. Pour in beef broth and water, then return beef to the pot.
  6. Stir in diced tomatoes, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 30 minutes.
  8. Add potatoes and green beans, then simmer for another 20 minutes.
  9. Adjust seasoning if needed and serve hot.
