Ingredients

- 1 lb beef stew meat, cubed
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Add onions, carrots, and garlic. Cook until softened, about 3 minutes.
- Pour in beef broth and stir in salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add sweet potatoes and cook for another 30 minutes until tender.
- Remove bay leaf before serving.
Notes
- For extra flavor, sear the beef in batches.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
