Ingredients

  • 1 lb beef stew meat, cubed
  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, about 5 minutes.
  3. Add onions, carrots, and garlic. Cook until softened, about 3 minutes.
  4. Pour in beef broth and stir in salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add sweet potatoes and cook for another 30 minutes until tender.
  7. Remove bay leaf before serving.
