Ingredients

- 4 large tomatoes
- 200g ground beef
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 180°C (350°F).
- Cut the tops off the tomatoes and scoop out the pulp, leaving a shell.
- Chop the tomato pulp and set aside.
- Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
- Add ground beef and cook until browned. Stir in chopped tomato pulp, rice, oregano, salt, and pepper.
- Fill the tomato shells with the beef and rice mixture.
- Place stuffed tomatoes in a baking dish and sprinkle with Parmesan cheese.
- Bake for 25-30 minutes until tomatoes are tender.
Notes
- Choose firm tomatoes for easier stuffing.
- You can substitute ground beef with ground turkey or chicken.
- Leftovers can be stored in the fridge for up to 2 days.
