Description

Delicious bell peppers filled with a savory mixture of ground beef, cheese, and spices, baked to perfection for a hearty meal.


Ingredients

  • 4 large bell peppers, any color
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can (15 oz) diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.
  4. Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and cook for an additional 5 minutes.
  6. Remove the skillet from heat and stir in half of the shredded cheese.
  7. Stuff each bell pepper with the beef and rice mixture, packing it tightly.
  8. Place the stuffed peppers upright in a baking dish. Pour a little water at the bottom of the dish to help steam the peppers.
  9. Cover the dish with foil and bake for 30 minutes.
  10. Remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  11. Garnish with fresh parsley if desired and serve hot.

Notes

  • Feel free to substitute ground turkey or chicken for the beef.
  • Add chopped vegetables like zucchini or mushrooms to the filling for extra nutrition.
  • These stuffed peppers can be made ahead of time and refrigerated before baking.
