- 4 large bell peppers, any color
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can (15 oz) diced tomatoes, drained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.
- Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and cook for an additional 5 minutes.
- Remove the skillet from heat and stir in half of the shredded cheese.
- Stuff each bell pepper with the beef and rice mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish. Pour a little water at the bottom of the dish to help steam the peppers.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley if desired and serve hot.
Notes
- Feel free to substitute ground turkey or chicken for the beef.
- Add chopped vegetables like zucchini or mushrooms to the filling for extra nutrition.
- These stuffed peppers can be made ahead of time and refrigerated before baking.
