Ingredients

- 2 cups mixed beans, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked beans.
- In a large pot, sauté onion and garlic until soft.
- Add bell pepper, carrots, and celery; cook for 5 minutes.
- Stir in the beans, broth, diced tomatoes, cumin, and paprika.
- Bring to a boil; reduce heat and simmer for 1 hour.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- Adjust cooking time based on the type of beans used.
- Can be stored in the refrigerator for up to 5 days.
- Freezes well for future meals.
