- 2 cups dried beans
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Soak the beans overnight in water.
- Drain and rinse the beans.
- In a large pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Add the soaked beans, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours.
- Season with salt and pepper.
- Remove bay leaf before serving.
