Description

BBQ pulled chicken quesadillas combine tender shredded chicken with smoky BBQ sauce and melted cheese, all wrapped in a crispy tortilla. Perfect for a quick lunch or dinner.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup diced red onion
  • 2 tbsp chopped cilantro (optional)
  • 1 tbsp olive oil

Instructions

  1. Mix shredded chicken with BBQ sauce in a bowl.
  2. Heat olive oil in a pan over medium heat.
  3. Place one tortilla in the pan and sprinkle half with cheese.
  4. Add BBQ chicken, red onion, and cilantro on top of the cheese.
  5. Fold the tortilla in half and cook for 2-3 minutes per side until golden brown.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm.
