Description
BBQ pulled chicken quesadillas combine tender shredded chicken with smoky BBQ sauce and melted cheese, all wrapped in a crispy tortilla. Perfect for a quick lunch or dinner.

- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup diced red onion
- 2 tbsp chopped cilantro (optional)
- 1 tbsp olive oil
Instructions
- Mix shredded chicken with BBQ sauce in a bowl.
- Heat olive oil in a pan over medium heat.
- Place one tortilla in the pan and sprinkle half with cheese.
- Add BBQ chicken, red onion, and cilantro on top of the cheese.
- Fold the tortilla in half and cook for 2-3 minutes per side until golden brown.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Use leftover rotisserie chicken for quick prep.
- Add jalapeños for extra spice.
- Serve with sour cream or guacamole.
