Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 cups whole milk
  • 4 large egg yolks, beaten
  • 1 tablespoon vanilla extract
  • 1 box (12 oz) vanilla wafers
  • 4 ripe bananas, sliced
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. In a medium saucepan, whisk together the sugar, flour, and salt.
  2. Gradually add the milk to the mixture, stirring constantly over medium heat until thickened.
  3. Once thick, remove from heat and stir in the beaten egg yolks and vanilla extract.
  4. Return to heat and cook for an additional 2 minutes, stirring constantly. Remove from heat and let cool slightly.
  5. In a large serving dish, layer half of the vanilla wafers, half of the sliced bananas, and half of the pudding mixture. Repeat the layers.
  6. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  7. Spread the whipped cream over the top layer of pudding.
  8. Cover and refrigerate for at least 4 hours or overnight before serving.

Notes

  • For best flavor, use ripe bananas.
  • Feel free to add more layers of wafers and bananas if desired.
  • You can substitute homemade whipped cream with store-bought if you’re short on time.
