- 1 package of phyllo pastry

Instructions
- Preheat the oven to 400°F (200°C).
- Chop the mixed vegetables into small pieces.
- In a pan, heat olive oil and add cumin and coriander, sauté for a minute.
- Add the chopped vegetables and salt, cook until tender.
- Remove the vegetable mixture from heat and let it cool.
- Take a sheet of phyllo pastry and cut it into strips.
- Place a spoonful of the vegetable filling at one end of the strip.
- Fold the pastry over the filling to form a triangle.
- Continue folding the triangle along the strip until you reach the end.
- Seal the edges with a little water to prevent the filling from leaking.
- Place the shaped samosas on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
