  • 1 can Black beans
  • 1 cup Cheddar cheese
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke several holes in each potato with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender.
  4. In a bowl, combine the black beans, olive oil, ground cumin, salt, and black pepper.
  5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
  6. Slice each sweet potato down the middle and gently fluff the inside with a fork.
