- 4 medium Sweet potatoes
- 1 can Black beans
- 1 cup Cheddar cheese
- 1 tablespoon Olive oil
- 1 teaspoon Ground cumin
- to taste Salt
- to taste Black pepper
- for garnish Fresh cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and poke several holes in each potato with a fork.
- Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender.
- In a bowl, combine the black beans, olive oil, ground cumin, salt, and black pepper.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
- Slice each sweet potato down the middle and gently fluff the inside with a fork.
- Spoon the black bean mixture into each sweet potato, then top with shredded cheddar cheese.
- Return to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- You can substitute black beans with pinto or kidney beans if preferred.
- For a spicier kick, add jalapeños or your favorite hot sauce.
