Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1/2 cup cauliflower rice
  • 1/2 cup shredded cheese
  • 1/4 cup diced onions
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers, remove seeds, and rinse.
  3. In a pan, brown ground meat with onions and garlic.
  4. Stir in cauliflower rice, salt, pepper, and Italian seasoning.
  5. Fill peppers with the meat mixture.
  6. Top with shredded cheese.
  7. Bake for 25-30 minutes until peppers are tender.
