A simple low-carb recipe for baked stuffed peppers that’s both healthy and delicious.
Ingredients

- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1/2 cup cauliflower rice
- 1/2 cup shredded cheese
- 1/4 cup diced onions
- 1 clove garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off peppers, remove seeds, and rinse.
- In a pan, brown ground meat with onions and garlic.
- Stir in cauliflower rice, salt, pepper, and Italian seasoning.
- Fill peppers with the meat mixture.
- Top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender.
Notes
- Use lean meat for lower fat.
- Store leftovers in the fridge for up to 3 days.
