Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 medium flour tortillas
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat.
  3. Add mushrooms and sauté for 3-4 minutes.
  4. Add spinach, garlic powder, salt, and pepper. Cook until spinach wilts.
  5. Place two tortillas on a baking sheet.
  6. Spread the spinach-mushroom mixture evenly over the tortillas.
  7. Sprinkle shredded cheese on top.
  8. Cover with the remaining tortillas.
  9. Bake for 8-10 minutes until cheese melts and tortillas are golden.
  10. Slice and serve warm.
