Ingredients

  • 8 oz pasta (penne or rigatoni)
  • 1 lb Louisiana sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, cook the sliced Louisiana sausage over medium heat until browned. Add minced garlic and cook for an additional minute.
  4. Add the shrimp to the skillet and cook until pink, about 2-3 minutes. Stir in the diced tomatoes and Cajun seasoning. Cook for another 2 minutes.
  5. In a large mixing bowl, combine the cooked pasta, sausage and shrimp mixture, heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper to taste.
  6. Transfer the mixture to a greased baking dish. Top with the remaining mozzarella and Parmesan cheeses.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Garnish with chopped parsley before serving.
