- 2 medium zucchinis
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs

- 2 eggs
- 1 tablespoon olive oil
Instructions
- Preheat oven to 425°F (220°C).
- Cut zucchinis into fry-sized strips.
- Mix Parmesan, breadcrumbs, garlic powder, salt, and pepper in a bowl.
- Beat eggs in a separate bowl.
- Dip zucchini strips in egg, then coat with breadcrumb mixture.
- Place on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 20 minutes or until golden brown.
