- 1 lb ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach, chopped
- 1 cup Alfredo sauce
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, oregano, salt, and pepper.
- Form the mixture into 1-inch meatballs and place on a baking sheet.
- Bake for 20-25 minutes until golden and cooked through.
- Heat olive oil in a pan over medium heat, add spinach, and cook until wilted.
- Stir in Alfredo sauce and warm through.
- Serve meatballs with spinach Alfredo sauce.
