Instructions
- Toast the bread slices until golden brown.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with lemon juice, salt, and pepper.
- Bring a pot of water to a simmer and add vinegar.
- Crack each egg into a small bowl, then gently slide into the simmering water.
- Poach eggs for 3-4 minutes until whites are set but yolks remain runny.
- Spread mashed avocado evenly over toasted bread.
- Carefully place poached eggs on top.
- Sprinkle with red pepper flakes if desired.
- Serve immediately.
