Deliciously chewy and sweet, these Avalanche Cookies are a delightful treat packed with white chocolate chips, peanut butter, and Rice Krispies for a satisfying crunch.

- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1 cup Rice Krispies cereal
- 1/2 cup mini marshmallows (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract until well combined.
- Fold in the white chocolate chips, Rice Krispies, and mini marshmallows if using, until evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked but will set as they cool.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- For a twist, try adding chopped nuts or different types of chocolate chips.
