- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups quick oats

- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup white chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the peanut butter and softened butter until smooth.
- Add the granulated sugar and brown sugar, and beat until well combined.
- Mix in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, combine the oats, baking soda, and salt, then gradually add this mixture to the wet ingredients.
- Fold in the chocolate chips, white chocolate chips, and mini marshmallows until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
