- 15 oz ricotta cheese
- 1/2 cup powdered sugar
- 1 tsp lemon zest
- 1 cup heavy cream
- 1 tbsp cocoa powder (optional)
Instructions
- Preheat oven to 350°F. Grease a 9-inch round pan.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk, mixing until smooth.
- Pour batter into the pan. Bake for 25-30 minutes. Let cool.
- Beat ricotta, powdered sugar, and lemon zest until smooth.
- Whip heavy cream until stiff peaks form. Fold into ricotta mixture.
- Spread ricotta cream over cooled cake. Dust with cocoa if desired.
