Ingredients

- 4 cups chicken broth
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1 cup sliced carrots
- 1 cup tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 2 green onions, chopped
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add mushrooms, carrots, and bok choy. Cook for 5 minutes.
- Add tofu and soy sauce. Simmer for another 5 minutes.
- Garnish with green onions before serving.
Notes
- Adjust the soy sauce to taste.
- Add chili flakes for heat.
- Serve with rice noodles for a heartier meal.
