This Asian chicken stir-fry is quick, easy, and packed with flavor! Perfect for a weeknight dinner.

- 1 lb chicken breast, sliced into thin strips
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a bowl, combine chicken strips with soy sauce and sesame oil. Marinate for 15 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and ginger, stir-fry for 30 seconds.
- Add marinated chicken to the skillet. Cook until chicken is no longer pink, about 5-7 minutes.
- Add mixed vegetables to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- In a small bowl, mix cornstarch and water to create a slurry. Add to the skillet and stir until the sauce thickens.
- Garnish with green onions and sesame seeds before serving.
