Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, garlic powder, salt, and pepper until well combined.
  3. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
  4. Season the chicken breasts with salt and pepper, then sear them in the skillet for 4-5 minutes on each side until golden brown.
  5. Pour the apricot glaze over the chicken, making sure each piece is well coated.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
