- 4 boneless, skinless chicken breasts
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
- Season the chicken breasts with salt and pepper, then sear them in the skillet for 4-5 minutes on each side until golden brown.
- Pour the apricot glaze over the chicken, making sure each piece is well coated.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before slicing.
- Garnish with fresh parsley if desired and serve with your choice of sides.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- Serve with rice or steamed vegetables for a complete meal.
