- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons ice water
- 1/2 cup almond meal
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon almond extract
- 8 fresh apricots, halved and pitted
- 1 tablespoon apricot jam
- 1 tablespoon water
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix together the flour, softened butter, granulated sugar, and salt until crumbly.
- Add the egg yolk and ice water, mixing until a dough forms. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
- Blind bake the crust for 15 minutes. Remove from the oven and let cool.
- In another bowl, combine almond meal, powdered sugar, softened butter, egg, and almond extract until smooth. Spread the almond cream evenly over the cooled crust.
- Arrange the apricot halves, cut side up, on top of the almond cream.
- Bake for an additional 25-30 minutes until the almond cream is set and lightly golden.
- In a small saucepan, heat apricot jam and water over low heat until melted. Brush the warm glaze over the apricots after baking.
- Let the tart cool, then dust with powdered sugar before serving.
Notes
- You can substitute fresh apricots with canned or frozen if necessary, but drain them well.
- For added flavor, consider sprinkling some sliced almonds on top before baking.
