Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 1/2 cup almond meal
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon almond extract
  • 8 fresh apricots, halved and pitted
  • 1 tablespoon apricot jam
  • 1 tablespoon water
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, softened butter, granulated sugar, and salt until crumbly.
  3. Add the egg yolk and ice water, mixing until a dough forms. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  4. Blind bake the crust for 15 minutes. Remove from the oven and let cool.
  5. In another bowl, combine almond meal, powdered sugar, softened butter, egg, and almond extract until smooth. Spread the almond cream evenly over the cooled crust.
  6. Arrange the apricot halves, cut side up, on top of the almond cream.
  7. Bake for an additional 25-30 minutes until the almond cream is set and lightly golden.
  8. In a small saucepan, heat apricot jam and water over low heat until melted. Brush the warm glaze over the apricots after baking.
  9. Let the tart cool, then dust with powdered sugar before serving.

Notes

  • You can substitute fresh apricots with canned or frozen if necessary, but drain them well.
  • For added flavor, consider sprinkling some sliced almonds on top before baking.
