- 2 cups fresh apricots, halved and pitted
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a baking dish.
- Arrange apricot halves in the dish.
- In a bowl, mix sugar, flour, and baking powder.
- Add melted butter, vanilla, and eggs. Mix well.
- Pour the batter over the apricots.
- Bake for 30-35 minutes or until golden.
- Let cool before serving.
