A delicious and comforting apple rhubarb crisp with a buttery, crunchy topping.
Ingredients

- 4 cups sliced apples (Granny Smith or Honeycrisp work well)
- 2 cups sliced rhubarb
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the sliced apples, rhubarb, granulated sugar, lemon juice, and cinnamon until well combined.
- Transfer the fruit mixture to a greased 9×13 inch baking dish.
- In a separate bowl, combine the oats, flour, brown sugar, melted butter, and salt. Stir until the mixture is crumbly.
- Spread the oat mixture evenly over the fruit in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
- Allow to cool slightly before serving. Enjoy warm with ice cream or whipped cream!
Notes
- For a sweeter crisp, you can increase the amount of sugar in the fruit mixture.
- Feel free to add nuts to the topping for extra crunch.
- This crisp can be made ahead of time and reheated before serving.
