  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup diced apples (preferably Granny Smith)
  • Additional butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, mix the buttermilk, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Fold in the diced apples gently into the batter.
  5. Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 2 minutes or until golden brown.
  8. Keep the pancakes warm in a low oven while you cook the remaining batter.
  9. Serve warm with maple syrup and additional apple slices, if desired.
