Instructions
- Preheat oven to 375°F. Line a muffin tin with paper liners.

- In another bowl, mix melted butter and brown sugar. Add eggs and vanilla, then stir in grated apple.
- Alternate adding dry ingredients and milk to the wet mixture, stirring just until combined.
- Divide batter evenly among muffin cups. Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.
