  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with cupcake liners.
  2. Whisk flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Cream butter and sugar until light. Add eggs one at a time, mixing well.
  4. Mix in apple cider and vanilla.
  5. Alternate adding dry ingredients and sour cream to the wet mix.
  6. Fill cupcake liners 2/3 full. Bake for 18-20 minutes. Cool completely.
  7. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla.
  8. Frost cooled cupcakes and serve.
